This jalpai pickle recipe combines spices and mustard oil for a flavorful condiment. It's easy to prepare and can be preserved for a long time with vinegar.

Ingredients
- 1 tbsp paan flour
- 3 dry red chillies
- 1 tsp cumin seeds
- 1 tsp coriander seeds
- 2 green cardamoms
- 1 cup mustard oil
- 2 bay leaves
- 2 whole dry red chillies
- 1 tsp garlic paste
- 2 cups sugar
- 1 tsp salt
- 1 cup vinegar
Instructions
- Prepare the spices: Grind together paan flour, dry red chillies, cumin seeds, and coriander seeds. Fry the spices in a pan with green cardamoms and green chillies until crispy.
- Mash the jalpai: Once the jalpai has cooled, mash it by hand without making it too smooth.
- Make the pickle masala: In a pot, heat mustard oil and add bay leaves, whole dry red chillies, and garlic paste. Fry well.
- Combine ingredients: Add the mashed jalpai to the pot, followed by sugar, salt, and vinegar. Mix well.
- Final steps: Let the pickle cool down before preserving it. It will thicken as it cools.
