Ingredients
- 150 grams all-purpose flour
- 1 stick cold unsalted butter
- 1/4 cup ice water
- granulated sugar
- kosher salt
Instructions
- Prepare the dough: Mix all-purpose flour, granulated sugar, and kosher salt together. Add cold unsalted butter in tablespoon-sized pieces and mix with hands.
- Add ice water: Use a bench scraper to corral the mixture into a mound and add 1/4 cup of ice water to moisten the flour.
- Roll out the dough: Roll out the dough multiple times, adding flour as needed, until it feels homogenous and holds together.
- Shape the dough: Form the dough into a disc, wrap it in plastic, and chill in the fridge for at least 30 minutes.
- Roll out chilled dough: After chilling, roll out the dough on a floured surface, rotating frequently to maintain a circular shape.
- Transfer to tart pan: Fold the dough and place it into the tart pan, ensuring there are no air pockets and the edges are well-formed.
- Dock the dough: Poke air holes in the dough to prevent it from puffing up during baking.
- Blind bake: Line the dough with parchment paper and fill with baking beans or weights. Bake in the oven for about 30 minutes until set.
- Finish baking: Remove the weights and parchment, then return to the oven until the crust is golden brown all over.
