Place boneless, skinless chicken thighs in a slow cooker.
Add soy sauce, honey, mirin, ginger, garlic, and cornstarch to the slow cooker.
Cook for a couple of hours until the chicken is fully cooked.
Mix rice directly in with the cooked chicken for flavor absorption.
Prepare Yum Yum Sauce by mixing all the ingredients in a bowl.
Portion out the chicken and rice mixture into bowls and drizzle with Yum Yum Sauce.
Store the prepared bowls in the freezer for easy reheating throughout the week.
