In a mixing bowl, combine water, salt, yeast, and olive oil. Stir to combine.
Add flour and stir to combine.
Scrape the dough off the side of the bowl and cover it with plastic wrap. Let it proof for 8 to 24 hours on the kitchen counter.
After proofing, shape the pizza dough into a round shape and let it rest for 10 minutes.
Preheat the oven to 450 degrees.
Par bake the bacon by microwaving it for 2 minutes on a paper plate covered with a paper towel.
Spread pizza sauce on the dough and top with shredded provolone mozzarella cheese.
Add pepperoni and bacon on one pizza and black olives and bacon on the other pizza.
Lightly top each pizza with cheese to garnish.
Bake at 450 degrees for 12 to 15 minutes.
