Ingredients
- For Asian Zing Sauce
- 1 tsp toasted sesame oil
- 1.5 tbsp vegetable oil
- 4 cloves garlic
- 2-inch knob ginger
- 0.5 cup granulated white sugar
- 0.5 cup dark soy sauce
- 0.25 cup regular soy sauce
- 0.25 cup mirin
- 0.75 cup rice vinegar
- 1 tbsp gochujang
- Thai basil
- Cornstarch slurry
- For Mango Habanero Sauce
- 0.75 cup water
- 0.75 cup sugar
- 4 large ripe mangoes
- 2 cloves garlic
- 10 habanero chilies
- 0.25 cup lime juice
- 0.5 cup white distilled vinegar
- 1.5 tbsp corn syrup
- 0.25 cup unsalted butter
- For Parmesan Garlic Sauce
- 8 cloves garlic
- 2 tbsp Dijon mustard
- 1 tbsp corn syrup
- 1.5 tsp fresh thyme leaves
- Juice of 2 lemons
- 1 cup grated Parmigiano-Reggiano
- 2 egg yolks
- 1 cup canola oil
- 1 red Fresno chili
- 1 small shallot
- Salt and pepper
- 2 tsp rosemary
- 2 tbsp parsley
- Chicken Wings (4 pounds)

Instructions
- Prepare the wings by seasoning and curing them in the fridge.
- Fry the wings in batches until pale golden, then fry again at a higher temperature until crisp.
- Make the Asian Zing Sauce by sautéing garlic and ginger, then adding various sauces and ingredients, thickening with a cornstarch slurry.
- Create the Mango Habanero Sauce by blending mangoes, habaneros, garlic, lime juice, vinegar, and other ingredients, simmering until thickened.
- For the Parmesan Garlic Sauce, blend garlic, mustard, thyme, lemon juice, Parmigiano-Reggiano, egg yolks, and oil until creamy, then mix in remaining ingredients.
- Coat the wings in each sauce and serve, optionally garnishing with green onions, chives, or additional cheese.
