Prepare the Karaki Jamid by breaking it, mixing it with water until it becomes liquid.
Boil the sheep meat in cold water to remove excess grease and rancid flavors.
Melt the local ghee in a pan, add onion slices, salt, and cook until onions are soft.
Add the boiled meat and prepared Jamid to the pan. Optionally, add spices or cardamom for flavor.
If the Jamid thickens, dilute it with Ayran yogurt for a tangy taste.
Cook the meat in the Jamid until tender and flavorful.
Prepare the rice by frying it with ghee, adding boiling water, and a bit of turmeric for color.
Layer the Mansaf in a large tray: start with Shrak bread, pour Jamid, add rice, pour more Jamid, and top with meat.
Decorate the Mansaf with almonds and parsley, cover with more Shrak bread.
