Ingredients
- Karaki Jamid (dried and salted milk)
- Local ghee
- Sheep meat
- Onion
- Salt
- Spices (optional)
- Cardamom (optional)
- Ayran yogurt (optional)
- Rice
- Turmeric
- Shrak bread
- Almonds
- Parsley
Instructions
- Prepare the Karaki Jamid by breaking it, mixing it with water until it becomes liquid.
- Boil the sheep meat in cold water to remove excess grease and rancid flavors.
- Melt the local ghee in a pan, add onion slices, salt, and cook until onions are soft.
- Add the boiled meat and prepared Jamid to the pan. Optionally, add spices or cardamom for flavor.
- If the Jamid thickens, dilute it with Ayran yogurt for a tangy taste.
- Cook the meat in the Jamid until tender and flavorful.
- Prepare the rice by frying it with ghee, adding boiling water, and a bit of turmeric for color.
- Layer the Mansaf in a large tray: start with Shrak bread, pour Jamid, add rice, pour more Jamid, and top with meat.
- Decorate the Mansaf with almonds and parsley, cover with more Shrak bread.
- Serve hot and enjoy the strongest meal in the world, Jordanian Mansaf!
