In a separate bowl, mix honey and warm water until incorporated. Set aside for one hour.
After one hour, do eight stretch and folds. Cover the dough and let it sit for another hour. Repeat eight more stretch and folds.
Let the dough sit for one more hour.
Preheat the oven to 450 degrees.
Shape the dough and place it in a preheated Dutch oven at 450 degrees.
Bake for 30 minutes with the lid on, then remove the lid for the last 10 minutes for a total of 40 minutes.
Serve with cinnamon honey butter.
