After coating the flour with salt, add it to the yeast mixture.
Add warm milk and mix all the ingredients together.
Knead the dough by hand until well mixed without raw flour.
Add olive oil to the dough and continue kneading until the oil seeps into it.
Place the dough in a warm place and let it ferment until it doubles or triples in size (36℃~38℃).
Cut the potatoes into bite-size pieces and boil them in the microwave for 7 minutes.
Mash the hot potatoes and knead in the salt evenly.
Divide the potatoes into 8 equal parts and form them into balls.
After degassing the dough, divide it into 8 equal parts and cover with cling film.
Sprinkle flour on a flat surface and flatten each dough ball with a roller.
Place cheese and potatoes in the center of each flattened dough and carefully wrap it like a gift.
Sprinkle flour on the wrapped dough and flatten it to a thickness of about 12mm and a diameter of 12cm.
Heat a pan and coat it with cooking oil.
Check if the pan is preheated by splashing water and then add the dough (high heat).
Flip the bread over when the back is browned and cook the other side until browned as well.
Reduce the heat to low and continue cooking until the bread is fully cooked.
Cover the bread with a fabric to prevent it from drying out.
Serve the Cheesy Potato Bread with melted butter, if desired. Enjoy its soft and fluffy texture with the delicious potato and cheese filling. It pairs well with curry or can be enjoyed on its own.
