Saudi Chicken and Oats Soup

Ingredients

  • 500 grams chicken breast, cut into small cubes
  • 1 medium onion, diced
  • 2 tomatoes, grated
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 2 black limes
  • 1 small stick cinnamon
  • 2 cloves
  • 5 cardamom pods
  • 3 teaspoons salt
  • 1 teaspoon black pepper
  • 3/4 teaspoon cumin
  • 1/2 teaspoon ground coriander
  • 15 grams tomato paste
  • 150 grams rolled oats
  • Water
  • Toppings: cream, pita croutons, fried onions, chopped parsley, chili flakes

Instructions

  1. In a large pot over medium-high heat, sauté diced onion in olive oil until translucent. Add chicken cubes and cook until white all over.
  2. Add minced garlic, black limes, cinnamon, cloves, cardamom pods, salt, black pepper, cumin, and coriander. Stir and cook for 60-90 seconds.
  3. Add tomato paste and cook for 2-3 minutes. Add grated tomatoes and deglaze the pan.
  4. Pour in 2 liters of water, bring to a boil, then simmer for 25 minutes.
  5. Add rolled oats to the pot, cover, and simmer for an additional 20 minutes.
  6. Adjust thickness as desired. Serve hot with toppings like cream, pita croutons, fried onions, parsley, and chili flakes. Enjoy!
