Saudi Chicken and Oats Soup

Ingredients
- 500 grams chicken breast, cut into small cubes
- 1 medium onion, diced
- 2 tomatoes, grated
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 2 black limes
- 1 small stick cinnamon
- 2 cloves
- 5 cardamom pods
- 3 teaspoons salt
- 1 teaspoon black pepper
- 3/4 teaspoon cumin
- 1/2 teaspoon ground coriander
- 15 grams tomato paste
- 150 grams rolled oats
- Water
- Toppings: cream, pita croutons, fried onions, chopped parsley, chili flakes
Instructions
- In a large pot over medium-high heat, sauté diced onion in olive oil until translucent. Add chicken cubes and cook until white all over.
- Add minced garlic, black limes, cinnamon, cloves, cardamom pods, salt, black pepper, cumin, and coriander. Stir and cook for 60-90 seconds.
- Add tomato paste and cook for 2-3 minutes. Add grated tomatoes and deglaze the pan.
- Pour in 2 liters of water, bring to a boil, then simmer for 25 minutes.
- Add rolled oats to the pot, cover, and simmer for an additional 20 minutes.
- Adjust thickness as desired. Serve hot with toppings like cream, pita croutons, fried onions, parsley, and chili flakes. Enjoy!
