In a blender cup, combine low-fat cottage cheese, ranch seasoning, chipotle sauce, lime juice, diced garlic, and light mayo. Blend until smooth.
Dice the cooked chicken and mix it in a bowl with the prepared sauce, mozzarella, cooked diced bacon, and chives.
Place warm tortilla on a flat surface, add cooked white rice with cilantro, and evenly distribute the filling mixture. Sprinkle with more chives.
Roll the burritos, toast them, and repeat the process for the remaining burritos.
Enjoy or store in the freezer for later use.
