Season chicken tenders with salt, pepper, garlic powder, onion powder, chili powder, paprika, and cayenne pepper. Mix well and allow to dry out.
Prepare a dry mixture by combining flour, cornstarch, baking powder, and the same seasonings used for seasoning the chicken.
Transfer 1/3 of the dry mixture to another bowl and mix in club soda to create a thin pancake batter consistency.
Dip each seasoned chicken tender into the wet batter, then into the dry mixture, repeating the process (wet-dry-wet-dry).
Prepare the honey barbecue sauce by mixing ketchup, brown sugar, apple cider vinegar, Worcestershire sauce, hot sauce, honey, and cold butter in a saucepan until smooth.
Fry the coated chicken tenders in oil set at 350°F for about 5-6 minutes until golden brown. Allow them to rest, then fry for an additional minute for extra crispiness.
Serve the honey barbecue chicken tenders with ranch dressing for dipping. Enjoy!
