Ingredients

  • 1 pound of beans
  • 8 cups of water
  • 5 cups of all-purpose flour
  • 1 stick of unsalted butter
  • Hot water
  • 3 New Mexico Oro Chile pods
  • 1 garlic clove
  • 1/4 teaspoon of oregano
  • 1/4 teaspoon of ground cumin
  • Salt to taste
  • Bacon grease
  • Cheese

Instructions

  1. Clean and cook the beans in a pressure cooker with salt and 8 cups of water for 45 minutes.
  2. Make masa for tortillas by mixing all-purpose flour, salt, crumbled unsalted butter, and hot water. Knead the dough, divide it into balls, and allow it to rest.
  3. Stretch out and cook the tortillas on a hot skillet until blistered.
  4. Blend New Mexico Oro Chile pods, garlic, oregano, ground cumin, salt, and some beans with broth to make a bean mixture.
  5. Refry the beans in a pan with bacon grease, adding the bean mixture and additional bean water. Simmer until desired consistency.
  6. Add cheese to the beans and allow it to melt.
  7. Serve the bean and cheese mixture in the homemade tortillas to make delicious burritos. Enjoy!
