Homemade Bean and Cheese Burritos

Ingredients
- 1 pound of beans
- 8 cups of water
- 5 cups of all-purpose flour
- 1 stick of unsalted butter
- Hot water
- 3 New Mexico Oro Chile pods
- 1 garlic clove
- 1/4 teaspoon of oregano
- 1/4 teaspoon of ground cumin
- Salt to taste
- Bacon grease
- Cheese
Instructions
- Clean and cook the beans in a pressure cooker with salt and 8 cups of water for 45 minutes.
- Make masa for tortillas by mixing all-purpose flour, salt, crumbled unsalted butter, and hot water. Knead the dough, divide it into balls, and allow it to rest.
- Stretch out and cook the tortillas on a hot skillet until blistered.
- Blend New Mexico Oro Chile pods, garlic, oregano, ground cumin, salt, and some beans with broth to make a bean mixture.
- Refry the beans in a pan with bacon grease, adding the bean mixture and additional bean water. Simmer until desired consistency.
- Add cheese to the beans and allow it to melt.
- Serve the bean and cheese mixture in the homemade tortillas to make delicious burritos. Enjoy!
