French Minced Beef Hamburgers with Stuffed Mushrooms

Ingredients
- 3 ounces (85 grams) chopped onions
- 1 ounce of butter
- 1.5 pounds (680 grams) lean minced beef
- 1.5 teaspoons salt
- 1/8 teaspoon pepper
- Fresh thyme
- 1 egg
- 1 ounce softened butter or pork fat
- For stuffed mushrooms
- 6 large mushroom caps
- 1/2 ounce (16 grams) Parmesan cheese
- 1/2 ounce Gruyere cheese
- 1.5 tablespoons plain white bread crumbs
- 2 tablespoons chopped parsley
- 3 tablespoons chopped onion
- 3 tablespoons chopped spring onion or shallot
- Salt and pepper to taste
- Dried tarragon
- Heavy cream
- Melted butter
Instructions
- Sauté finely chopped onions in butter until tender but not browned.
- Mix minced beef with salt, pepper, thyme, egg, and softened butter/pork fat. Form into patties and refrigerate.
- Prepare stuffed mushrooms: Remove stems from mushroom caps and chop them. Sauté chopped stems, onions, spring onion/shallot, and seasonings. Add cheese, bread crumbs, parsley, and heavy cream. Stuff mushroom caps with the mixture, top with cheese, and bake at 375°F (190°C) for 15-20 minutes.
- Cook beef patties in a mixture of butter and oil until desired doneness.
- Prepare sauce by deglazing the pan with beef stock, reducing, and adding butter.
- Serve hamburgers with stuffed mushrooms and sauce drizzled on top. Enjoy!
