Mozzarella cheese (both shredded and cherry-sized)

Instructions:
Pound chicken breasts to a uniform thickness for even cooking.
Season chicken and let it rest in the fridge.
Prepare tomato sauce with olive oil, garlic, tomatoes, basil, salt, and a pinch of sugar.
Create seasoned breadcrumbs mixture with potato starch, granulated onion, granulated garlic, dried thyme, and optional tomato powder.
Add Pecorino Toscano and Parmigiano Reggiano to the breadcrumb mixture.
Dredge chicken in flour, beaten eggs, and seasoned breadcrumbs.
Pan-fry breaded chicken until golden brown and cooked through.
Layer tomato sauce in a baking dish, place cooked chicken on top.
Add mozzarella cheese and cherry-sized mozzarella on top of the chicken.
Sprinkle with more Pecorino Toscano and Parmigiano Reggiano.
Broil until cheese is melted and bubbly.
Garnish with fresh pepper and basil leaves before serving. Enjoy!
