Roughly chop onion, potato, and carrots. Add them to a pan along with red lentils, chicken bouillon, cumin, and smoked paprika.
Pour water just above the vegetables to ensure there is enough for the lentils to absorb.
Bring to a boil, then cover with a lid, reduce heat to a simmer, and cook for about 30 minutes until everything is tender.
Optionally, cook an onion and ground beef separately, seasoning it to taste.
Blend the soup for a smoother consistency.
Serve the soup topped with the cooked ground beef and a squeeze of lemon juice. Enjoy!
