Ingredients
- 2 or 3 inches water for soaking
- 1 sprig epazote (fresh or 1 spoon dried)
- 1/2 onion
- 3 cloves of garlic
- a pinch ground cumin
- 1/4 teaspoon baking soda (optional)
Instructions
- Soak the Beans: Cover your beans with cool water, two or three inches over the top, and leave them on the counter all night. In the morning, pour the soaking water down the drain and rinse the beans.
- Quick Soak Method: If you forgot to soak the beans, bring them to a boil for two minutes, turn off the fire, cover the pot, and let them sit for one hour. Then pour off that water and start again with fresh.
- Rinse the Beans: After soaking, put the beans in a colander and run water over them for a full minute, turning them with your hand.
- Cook the Beans: Simmer the beans on low heat, ensuring they are cooked all the way through. They should mash against the roof of your mouth without a chalky center.
- Add Ingredients: During the last half hour of cooking, add a sprig of epazote, half an onion, three cloves of garlic, and a pinch of ground cumin.
- Optional Baking Soda: If desired, add a pinch of baking soda to the soaking water to help soften the skins.
- Serve: Enjoy a small bowl of beans daily to help your stomach adjust.
