Air Fryer Spicy Fried Chicken Sandwiches

Ingredients
- 1 cup panko breadcrumbs
- 2 tablespoons extra virgin olive oil
- 1 large egg
- 1 tablespoon flour
- 2 tablespoons hot sauce
- 1/2 teaspoon garlic powder
- 1/4 teaspoon kosher salt
- 1/8 teaspoon black pepper
- 2 boneless, skinless chicken breasts (8 ounces each)
- Kosher salt and black pepper (to taste)
- 2 cups shredded iceberg lettuce
- 1/4 cup pickled jalapenos
- 4 hamburger buns
- For the sauce: 1/4 cup mayo, 1 tablespoon hot sauce
Instructions
- In a microwave-safe bowl, combine panko breadcrumbs and extra virgin olive oil. Microwave for 1-3 minutes until breadcrumbs turn light gold, stirring halfway through.
- In a separate bowl, whisk together egg, flour, hot sauce, garlic powder, salt, and pepper to make the batter.
- Pound chicken breasts to even thickness, season with salt and pepper, then dredge in the batter and coat with the panko mixture.
- Preheat the air fryer to 400 degrees Fahrenheit. Cook the chicken for 12-16 minutes, flipping halfway through.
- While the chicken cooks, toast the buns in the air fryer.
- Mix mayo and hot sauce to make the spicy sauce.
- Assemble the sandwiches by spreading the sauce on the buns, adding lettuce, pickled jalapenos, and the crispy chicken.
- Serve hot and enjoy the spicy fried chicken sandwiches!
