Ingredients

  • 1 cup panko breadcrumbs
  • 2 tablespoons extra virgin olive oil
  • 1 large egg
  • 1 tablespoon flour
  • 2 tablespoons hot sauce
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon kosher salt
  • 1/8 teaspoon black pepper
  • 2 boneless, skinless chicken breasts (8 ounces each)
  • Kosher salt and black pepper (to taste)
  • 2 cups shredded iceberg lettuce
  • 1/4 cup pickled jalapenos
  • 4 hamburger buns
  • For the sauce: 1/4 cup mayo, 1 tablespoon hot sauce

Instructions

  1. In a microwave-safe bowl, combine panko breadcrumbs and extra virgin olive oil. Microwave for 1-3 minutes until breadcrumbs turn light gold, stirring halfway through.
  2. In a separate bowl, whisk together egg, flour, hot sauce, garlic powder, salt, and pepper to make the batter.
  3. Pound chicken breasts to even thickness, season with salt and pepper, then dredge in the batter and coat with the panko mixture.
  4. Preheat the air fryer to 400 degrees Fahrenheit. Cook the chicken for 12-16 minutes, flipping halfway through.
  5. While the chicken cooks, toast the buns in the air fryer.
  6. Mix mayo and hot sauce to make the spicy sauce.
  7. Assemble the sandwiches by spreading the sauce on the buns, adding lettuce, pickled jalapenos, and the crispy chicken.
  8. Serve hot and enjoy the spicy fried chicken sandwiches!
