In a bowl, dissolve the yeast and honey in 1/4 cup of warm water. Let it sit for 10 minutes.
Add salt, olive oil, 3/4 cup of equally warm water, and 1 cup of flour to the bowl. Stir until it becomes a batter.
Add 2 1/2 cups of flour to the bowl and stir until it gets too thick to stir.
Move the dough to a floured board and knead in the rest of the flour until it becomes a smooth, slightly sticky dough.
Coat a bowl with olive oil and put the dough in it. Cover it with a damp towel and let it sit in a warm place for 30-40 minutes until it almost doubles in size.
Cut the dough into four pieces and fold the outsides down and under, stretching it out until it's ready.
Cover the dough with a towel and let it sit in a warm place for 20-30 minutes.
Preheat the oven to 450 degrees and put the dough on a cornmeal pan.
Brush the dough with extra virgin olive oil and add a couple of tablespoons of sauce, a light shaking of red pepper flakes, and a light sprinkling of mozzarella, fontina, and parmesan cheese.
Add any other toppings you want and bake the pizza on the bottom of the oven for 5 minutes.
Move the pizza to the middle rack of the oven and bake for another 4-5 minutes until it's crispy and ready.
Enjoy!
