Wolfgang Puck's California Pizza Dough

Ingredients

  • 1 package of dry active yeast
  • 1 teaspoon of honey
  • 1/4 cup of warm water (105 degrees)
  • Salt
  • Olive oil
  • 3/4 cup of equally warm water (105 degrees)
  • 3 cups of flour (approximately)

Instructions

  1. In a bowl, dissolve the yeast and honey in 1/4 cup of warm water. Let it sit for 10 minutes.
  2. Add salt, olive oil, 3/4 cup of equally warm water, and 1 cup of flour to the bowl. Stir until it becomes a batter.
  3. Add 2 1/2 cups of flour to the bowl and stir until it gets too thick to stir.
  4. Move the dough to a floured board and knead in the rest of the flour until it becomes a smooth, slightly sticky dough.
  5. Coat a bowl with olive oil and put the dough in it. Cover it with a damp towel and let it sit in a warm place for 30-40 minutes until it almost doubles in size.
  6. Cut the dough into four pieces and fold the outsides down and under, stretching it out until it's ready.
  7. Cover the dough with a towel and let it sit in a warm place for 20-30 minutes.
  8. Preheat the oven to 450 degrees and put the dough on a cornmeal pan.
  9. Brush the dough with extra virgin olive oil and add a couple of tablespoons of sauce, a light shaking of red pepper flakes, and a light sprinkling of mozzarella, fontina, and parmesan cheese.
  10. Add any other toppings you want and bake the pizza on the bottom of the oven for 5 minutes.
  11. Move the pizza to the middle rack of the oven and bake for another 4-5 minutes until it's crispy and ready.
