Add the sliced potatoes and cook until they are almost cooked through.
Add the sliced onion and some salt, and continue to cook until the potatoes are fully cooked and the onion is soft.
Remove the potatoes and onion from the pan and let them cool on a tray.
Crack the eggs into a bowl and whisk them thoroughly.
Add the cooled potatoes and onion to the eggs and mix well.
Pour the mixture back into the pan and cook on one side for about 15 minutes.
Flip the tortilla and cook for another 5-10 minutes until fully cooked.
Serve hot or cold.
