900 grams (2 pounds) of extra lean ground beef (5% fat)
3 red bell peppers
3 jalapenos
2 yellow onions (200 grams total)
4 cloves of garlic
400 grams of potatoes
250 grams of cold water
20 grams of vegetable stock powder
18 grams of dry gelatin
2 teaspoons (6 grams each) of chili powder, paprika, and cumin
Freshly ground black pepper
Salt
2 cans (800 grams) of crushed tomatoes
400 grams of kidney beans
15 grams of cocoa powder
Instructions:
Brown the ground beef in a cast iron pan, then transfer to a large pot.
Sauté diced vegetables until caramelized, then add spices and garlic.
Deglaze with prepared stock and transfer to the pot with the beef.
Add crushed tomatoes, kidney beans, cocoa powder, and potatoes to the pot.
Simmer for 30-40 minutes until potatoes are cooked through, then adjust seasoning.
Divide into 5 meal prep containers, each serving containing 560 calories, 54g carbs, 13g fat, and 54g protein.
