Preheat the oven to the desired temperature for roasting.
In a bowl, mix chopped onion, parsley, minced garlic, spices, and ground meat until well combined.
Form the meat mixture into a block on a sheet pan and cut into 8 equal portions.
Add quartered tomatoes around the meat portions on the sheet pan. Drizzle olive oil over the meat and tomatoes.
Roast the kebabs in the oven until they are cooked 90% of the way through.
Finish the kebabs under the broiler for a caramelized exterior.
Prepare the condiments by mixing sumac with sliced onions and preparing the Harissa tahini sauce.
Assemble the sandwich by placing the cooked kebabs on the bread of choice, topping with sumac onions, and drizzling with Harissa tahini sauce.
Optionally, toast the assembled sandwich in a pan to seal it together.
