Instructions:
In a bowl, mix cold water, dry yeast, and honey (or sugar) until dissolved.
Add 00 flour and sea salt to the mixture, combining until a dough forms.
Let the dough rest covered for 30 minutes, then fold it to build gluten and let it rest for another hour.
Shape the dough into a ball, place it in an oiled pan, and let it rise for 30-40 minutes.
Press the dough gently to create dimples, drizzle with olive oil, and sprinkle with salt, rosemary, or oregano.
Bake at 450°F for 15-20 minutes until golden brown.
Once baked, top with prosciutto, spicy provolone, arugula, granola, and additional olive oil.
Serve and enjoy the soft and crunchy focaccia.
