Guanciale (pork cheek), sliced into thin strips and diced
Cheese, grated
Egg yolks
Pasta
Pasta water
Cracked black pepper
Instructions:
Slice the guanciale into thin strips, remove the rind, and dice into small to medium-sized pieces.
Grate the cheese into a bowl, add the egg yolks, and whisk until combined.
Cook the pasta according to package instructions.
In a pan over medium heat, cook the guanciale for 4-5 minutes until golden and fat has rendered.
Add the cooked pasta to the pan with guanciale, mix well to coat the pasta with oils.
Quickly add the egg and cheese mixture, stirring to combine and prevent scrambling.
Gradually add pasta water to achieve desired consistency.
Serve in bowls, top with guanciale, additional cheese, cracked black pepper.
