Pepperoni Pizza Bites

Ingredients
- 1.5 cups (180 grams) oat flour
- 2 teaspoons (8 grams) baking powder
- 1 teaspoon (4 grams) onion powder
- 1 teaspoon (4 grams) garlic powder
- 0.5 teaspoon (3 grams) salt
- 6 tablespoons (90 grams) liquid egg whites
- 1.5 cups (330 grams) plain non-fat Greek yogurt
- 15 slices (30 grams) pepperoni, diced
- 1 cup (240 grams) marinara sauce
- 3/4 cup (84 grams) shredded mozzarella cheese
- Chopped parsley for garnish (optional)
Instructions
- In a large bowl, combine oat flour, baking powder, onion powder, garlic powder, and salt.
- Stir in liquid egg whites and Greek yogurt until well incorporated.
- Grease mini muffin tins and divide the dough evenly into 48 wells.
- Shape the dough in each well to create pizza bite shapes.
- Par-bake at 425°F (218°C) for 4-6 minutes.
- Fill each well with marinara sauce, top with mozzarella cheese, and diced pepperoni.
- Bake for an additional 6-10 minutes until cheese is melted and slightly browned.
- Garnish with chopped parsley if desired.
- Cool the pizza bites, then flash freeze them.
- Vacuum seal the pizza bites using a vacuum sealer for long-term storage.
- To reheat, air fry at 400°F (204°C) for about 5 minutes until crispy.
