Prepare the coffee rub by mixing ground coffee, brown sugar, garlic powder, chipotle chili powder, pepper, and smoked salt in a bowl.
Trim the beef back ribs, remove the membrane, and apply a binder (soy paste or alternative) on both sides.
Sprinkle the coffee rub on the ribs and let them sit for a while.
Preheat the air fryer to 325°F.
Place the ribs in the air fryer and cook for 35 minutes.
While the ribs cook, prepare a sauce by mixing mayo, barbecue sauce, sriracha, and soy paste.
After 35 minutes, check the ribs' internal temperature (aim for almost 200°F).
Apply the sauce on the ribs, return them to the air fryer for a few more minutes to caramelize.
Serve the ribs hot and enjoy the delicious flavors.
