Classic Tiramisu

Ingredients
- 6 eggs
- 60 grams sugar
- 1 teaspoon vanilla extract
- 120 grams granulated sugar
- 170 grams cake flour
- 1/2 teaspoon kosher salt
- 450 grams mascarpone cheese
- 1 cup heavy cream
- Coffee (strong, freshly brewed)
- Marsala wine (optional)
- Cocoa powder
Instructions
- Prepare Ladyfinger Cookies: Beat egg yolks with sugar and vanilla until ribbon stage. Clean bowl and beat egg whites with sugar until stiff peaks. Gently fold in flour and salt. Pipe onto baking sheet and bake at 375°F for 10-12 minutes.
- Make Mascarpone Cream: Beat egg yolks with sugar, then fold in mascarpone cheese. Whip egg whites and fold into mixture. Whip heavy cream separately and fold into mixture.
- Assemble Tiramisu: Layer ladyfingers in a casserole dish, soaking them in coffee (and Marsala wine if desired). Spread mascarpone cream over ladyfingers. Repeat layers. Top with decorative cream layer and dust with cocoa powder.
- Refrigerate: Chill tiramisu for at least 4 hours, preferably overnight, to allow flavors to meld.
- Serve: Cut into portions and enjoy the light, flavorful cream and ethereal ladyfingers soaked in coffee.
