Brown 2 pounds of ground beef with salt, pepper, onion, carrot, celery, garlic, tomato paste, Rosemary, and Thyme.
Deglaze with red wine and add enough beef broth to cover the beef. Simmer until the broth reduces, then add peas and adjust seasoning.
Boil and mash potatoes with butter, shredded cheese, heavy cream, egg yolks, Parmesan cheese, salt, and pepper.
Layer the meat mixture in an oven-safe dish, top with mashed potatoes, score with a fork, sprinkle Parmesan cheese and black pepper.
Bake at 400°F for 25-30 minutes until the top is golden brown.
