Ingredients

  • 1/2 package Soba Noodles
  • 1/4 small red cabbage
  • 2 carrots
  • 1 red bell pepper

  • 1/2 cup peanut butter
  • 5 tbsp light soy sauce
  • 1/4 cup honey
  • 3 tbsp sriracha
  • 1 garlic clove
  • 1/2 tbsp grated ginger
  • Juice of 1 lime

Instructions

  1. Cook Soba Noodles: Water is poured into a pot on a portable stove. The soba noodles are added to the boiling water and cooked according to package instructions.
  2. Prepare Vegetables: A head of red cabbage is held, then chopped into thin strips. A red bell pepper is sliced into long, thin strips. A cucumber is sliced into thin planks using a mandoline slicer. The cucumber planks are then sliced into long, thin strips. Carrots are julienned into long, thin strips.
  3. Prepare Peanut Dressing: Peanut butter is spooned into a clear glass bowl. Honey is drizzled into the bowl. Sriracha is added. A lime is squeezed, and its juice is added to the bowl. Garlic is minced directly into the bowl using a microplane. Grated ginger is added. The ingredients are whisked together until well combined. Water is added as needed to achieve the desired consistency.
  4. Assemble the Salad: The cooked and drained soba noodles are placed in a large wooden bowl. The prepared red cabbage, carrots, red bell pepper, cucumber, and edamame are added to the bowl with the noodles. The peanut dressing is poured over the ingredients. The salad is mixed by hand (wearing gloves) until all ingredients are evenly coated with the dressing.
  5. Garnish (Optional): Sesame seeds are sprinkled over the salad. Chili flakes are added. Chopped peanuts are sprinkled over the salad.
