Cook bacon until crispy, remove from pan and leave a little bit of bacon fat in the pan.
Cook onion in the bacon fat until softened, then add a pinch of salt, brown sugar, and beef broth. Let it reduce to make bacon jam.
Make beer batter and fry onion rings until golden brown.
Toast burger buns with butter.
Season ground beef with salt and black pepper, then smash and cook until desired doneness.
Add cheddar cheese and mustard cheese on top of the patty.
Assemble the burger by spreading spicy mayo on the bottom bun, adding the burger patty with cheese, bacon jam, and onion ring. Top with the other half of the bun.
