Fillings of choice (e.g., diced tomatoes, cheddar)
Additional butter for finishing
Instructions:
In a bowl, mix whole milk and all-purpose flour until no lumps remain.
Add eggs, salt, and pepper (optional), mixing thoroughly until homogeneous.
Turn on the broiler and heat a pan over moderate heat, adding unsalted butter.
Pour in the egg mixture once the butter starts to brown, covering the pan immediately.
Cook for 45 seconds, checking for a golden bottom. Adjust cooking time if needed.
Lift the cooked egg from the bottom, allowing the liquid egg to fill in the space.
Place the pan under the broiler until the top is puffy and dry to the touch.
Add fillings on one half of the omelette, then fold it in half onto a plate.
Glide a teaspoon of butter on top, let it rest for 5 minutes, and serve.
Use three eggs for the same pan size to create a thicker omelette.
Follow the same cooking process, ensuring to layer the loose egg under the cooked layer thoroughly.
Place the omelette under the broiler until set.
Roll the omelette instead of folding it in half.
Top with butter, let it rest for about 7 minutes, and enjoy the luxurious texture.
