Ingredients
- 1/3 cup whole milk
- 2 teaspoons all-purpose flour
- 2 large eggs
- 1/4 teaspoon Diamond Crystal kosher salt
- 1 tablespoon unsalted butter

Instructions
- In a bowl, mix whole milk and all-purpose flour until no lumps remain.
- Add eggs, salt, and pepper (optional), mixing thoroughly until homogeneous.
- Turn on the broiler and heat a pan over moderate heat, adding unsalted butter.
- Pour in the egg mixture once the butter starts to brown, covering the pan immediately.
- Cook for 45 seconds, checking for a golden bottom. Adjust cooking time if needed.
- Lift the cooked egg from the bottom, allowing the liquid egg to fill in the space.
- Place the pan under the broiler until the top is puffy and dry to the touch.
- Add fillings on one half of the omelette, then fold it in half onto a plate.
- Glide a teaspoon of butter on top, let it rest for 5 minutes, and serve.

- Use three eggs for the same pan size to create a thicker omelette.
