Fresh Pico (diced tomatoes, red onion, cilantro, lime juice)
Instructions:
Rinse and drain lentils. Dice onion, mince shallots and garlic.
Saute onion, shallots, garlic in a saucepan with oil. Add spices, then cleaned lentils and plum tomatoes. Add water, bring to a boil, then simmer until lentils are soft.
Cool lentil mixture, add crushed tortilla chips. Refrigerate until solidified.
Make Pico by combining diced tomatoes, red onion, cilantro, lime juice.
Stir in smoked vegan cheese with lentils. Fill tortillas with lentil mixture, fold over and press to stick.
Heat cast iron pan with oil, toast filled tortillas until golden brown on both sides.
Serve tacos with shredded lettuce, fresh Pico, Greek vegan yogurt.
