Ingredients
- Pork tenderloins
- Barbecue seasoning
- Barbecue sauce
- Sweet corn
- Butter
- Kosher salt
- Angel hair slaw
- Granny Smith apple
- Sugar
- Apple cider vinegar
- Mayo
- Sour cream
Instructions
- Season the pork tenderloins with barbecue seasoning.
- Heat the grill and set up a hot zone and a cool zone.
- Sear the tenderloins on all sides on the hot zone for 2 minutes per side.
- Move the tenderloins to the cool zone and brush them with barbecue sauce.
- Rotate the tenderloins every 5 minutes until they reach an internal temperature of 140-145°F.
- Remove the tenderloins from the grill and let them rest.
- Char grill the sweet corn over the hot coals, brushing with melted butter and finishing with kosher salt.
- Make the green apple coleslaw by mixing angel hair slaw, grated Granny Smith apple, sugar, apple cider vinegar, mayo, and sour cream.
- Slice the pork tenderloins into medallions and serve with the green apple coleslaw and fire roasted sweet corn.
