Ingredients

  • 2 pounds lean ground beef
  • 1/2 cup diced onion
  • 1 cup bread crumbs
  • 2 teaspoons parsley
  • 2 teaspoons garlic powder
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 eggs
  • Barbecue sauce (to taste)
  • Glaze
  • 2 tablespoons brown sugar
  • 1/3 cup ketchup
  • 1 teaspoon prepared yellow mustard

Instructions

  1. Preheat oven to 350 degrees Fahrenheit.
  2. In a large bowl, combine ground beef, diced onion, bread crumbs, parsley, garlic powder, salt, pepper, eggs, and barbecue sauce. Mix well.
  3. Shape the meatloaf mixture into a loaf about 8 inches long and 4 inches wide on a baking sheet.
  4. Bake for 45 minutes at 350 degrees Fahrenheit.
  5. In a small bowl, mix brown sugar, ketchup, and mustard to make the glaze.
  6. Remove the meatloaf from the oven, pour the glaze over the top, and brush it on the sides.
  7. Return the meatloaf to the oven and bake for an additional 10-15 minutes or until the internal temperature reaches 160 degrees Fahrenheit.
  8. Let the meatloaf rest for 5-10 minutes before slicing.
  9. Serve with mashed potatoes and steamed vegetables. Enjoy!
