Add 450 g / 1 lb ground beef, season with salt, black pepper, and 1 tsp sage. Cook over medium-high heat for 6-7 minutes.
Crack 5 eggs into the pan, season with salt and black pepper. Lower the heat and stir until the eggs are partially cooked.
Remove from heat before the eggs are fully cooked.
Garnish with chives if desired.
Serve with bread or vegetables. Enjoy!
