Heat olive oil in a stainless steel skillet over medium heat. Saute diced onions until softened, then add garlic and saute for 30 seconds.
Toast spices in the skillet for 30 seconds, then add fire-roasted crushed tomatoes, roasted red peppers, and additional spices. Simmer for 20 minutes.
Create wells in the sauce and crack eggs into them. Spoon sauce over the whites of the eggs, cover, and simmer for 5-12 minutes until eggs are cooked to your liking.
Garnish with crumbled feta cheese, parsley or cilantro, and a drizzle of honey. Serve immediately with toasted pita or crusty bread.
