Equal parts beaten egg white and whole milk for brushing
Instructions:
In a stand mixer, combine bread flour, kosher salt, instant dry yeast, and diastatic malt powder. Whisk until homogenous.
Add whole milk, water, beaten egg, and oil. Knead on medium-low speed for 8-12 minutes until gluten develops.
Let the dough rise for 1-2 hours until doubled in size. Divide into four pieces and shape into hero rolls.
Dust parchment paper with semolina flour, place the rolls, cover, and let rise for 45 minutes to an hour.
Preheat oven to 425°F. Brush rolls with egg white and milk mixture, score the tops, and bake for 10-14 minutes.
Cook beef patties and onions in a skillet with adobo seasoning until browned. Add American cheese slices to melt.
Toast hero rolls, assemble with beef, cheese, lettuce, tomato, onions, ketchup, and mayo.
