New York City Style Chopped Cheese Hero

Ingredients
- 540 grams bread flour
- 12 grams kosher salt
- 7 grams instant dry yeast
- 8 grams diastatic malt powder (optional)
- 120 grams whole milk
- 145 grams water
- 60 grams whole beaten egg
- 50 grams vegetable or canola oil
- Beef patties
- Yellow American Singles cheese slices
- Adobo seasoning
- Iceberg lettuce
- Beefsteak tomato
- Small onion
- Ketchup
- Mayo
- Semolina flour for dusting
- Equal parts beaten egg white and whole milk for brushing
Instructions
- In a stand mixer, combine bread flour, kosher salt, instant dry yeast, and diastatic malt powder. Whisk until homogenous.
- Add whole milk, water, beaten egg, and oil. Knead on medium-low speed for 8-12 minutes until gluten develops.
- Let the dough rise for 1-2 hours until doubled in size. Divide into four pieces and shape into hero rolls.
- Dust parchment paper with semolina flour, place the rolls, cover, and let rise for 45 minutes to an hour.
- Preheat oven to 425°F. Brush rolls with egg white and milk mixture, score the tops, and bake for 10-14 minutes.
- Cook beef patties and onions in a skillet with adobo seasoning until browned. Add American cheese slices to melt.
- Toast hero rolls, assemble with beef, cheese, lettuce, tomato, onions, ketchup, and mayo.
