Homemade Bolillos

Ingredients

  • 10 grams of Dry Yeast (3 teaspoons)
  • 340 ml of Warm water (Between 28 to 30 C)
  • 450 grams of All-purpose Flour (approximately 4 cups)
  • 2 teaspoons of Salt (9 grams)
  • 2 tablespoons of Olive Oil (or other vegetable oil)
  • Additional flour for kneading

Instructions

  1. In a bowl, mix dry yeast with warm water and let it activate.
  2. Slowly add 1 cup of flour to the yeast mixture, then mix in 2 teaspoons of salt and continue adding flour until a dough forms.
  3. Add 2 tablespoons of oil and knead the dough until it becomes shiny and stretchy, adding more flour if needed.
  4. Place the dough in a greased bowl, cover, and let it rise until doubled in size (about 1 1/2 hours).
  5. Punch down the dough, knead for 2 more minutes, then divide into 8 equal portions.
  6. Shape each portion into a ball and form them into "Bolillos" shapes on a floured surface.
  7. Transfer the Bolillos to a baking tray lined with parchment paper, brush with oil, cover, and let them rise again until doubled in size (about 1 hour).
  8. Preheat the oven to 225°C, make cuts on the Bolillos, and bake for 25-30 minutes, starting at 225°C and then reducing the temperature to 190°C.
  9. Add water to the tray below the Bolillos before baking and during baking to create steam.
  10. Once golden brown, remove from the oven, cover with a cloth for 5-10 minutes, then cool on a rack. Enjoy your homemade Bolillos!
