Homemade Chicken McNuggets

Ingredients
- 1.5 pounds of chicken breast
- 1/4 pound of chicken skin
- 2 teaspoons of kosher salt
- 1 teaspoon of granulated sugar
- 1/2 teaspoon of MSG
- For the barbecue sauce: 1 cup of ketchup, 1/4 cup of dark brown sugar, 1 tablespoon of smoked paprika, 1 tablespoon of garlic powder, 1 tablespoon of Dijon mustard, 2 tablespoons of Worcestershire sauce, 1 tablespoon of Chinese black vinegar, 3 tablespoons of rye whiskey (optional), 1/2 cup of water, 3 tablespoons of white distilled vinegar
Instructions
- Cut chicken breasts into 1-inch cubes and rough chop the chicken skin.
- Grind the meat and skin together until fine. Mix with salt, sugar, and MSG. Chill in the freezer for 10 minutes.
- Prepare three coatings: thin cornstarch batter, flour dredge, and tempura batter.
- Shape the chicken mixture into nugget shapes. Coat in cornstarch, flour mixture, and tempura batter.
- Fry in oil at 375°F for 5-7 minutes until golden brown. Drain on a wire rack.
- For the barbecue sauce, combine all ingredients, simmer for 15-20 minutes until thick.
- Serve the homemade McNuggets with the barbecue sauce. Enjoy!
