Mayonnaise
Garlic
Cilantro
Thai chili flakes (or ancho chili flakes)
Lime
Instructions:
Grill the corn on high heat until charred on all sides.
Crumble the cotija cheese and set aside.
In a bowl, mix mayonnaise with minced garlic, cilantro, and chili flakes.
Spread the mayonnaise mixture over the grilled corn.
Sprinkle the corn with crumbled cotija cheese.
Squeeze lime juice over the corn before serving. Enjoy!
