Peel and cube the large russet potatoes. Toss them in a bowl with olive oil, salt, pepper, garlic, and paprika.
Air fry the seasoned potatoes at 400 degrees for 25 minutes.
In a hot pan, cook the ground beef with taco seasonings until browned.
Stir in the crispy potatoes, top with shredded cheddar, and bake for a few minutes until the cheese melts.
Drizzle queso over the top and garnish with fresh cilantro if desired.
Serve with sour cream, taco sauce, and your favorite taco toppings.
