Heat a wok until very high heat (at least 160°C) until it starts to smoke.
Fry prawn shells until they turn orange, then remove them.
Use the prawn oil to make a broth by adding water and simmering.
Add XO sauce to the wok, followed by onions, garlic, ginger, and other vegetables.
Stir-fry the vegetables and prawns until cooked.
Season with salt, sugar, and stock to taste.
Serve the stir-fry hot and enjoy the flavorful dish.
