Shakshuka is a delicious, cozy dish that can be enjoyed for breakfast, lunch, or dinner, featuring a mix of vegetables and eggs in a flavorful tomato sauce.

Ingredients
- 1 big onion or 1.5 small onions
- 4 cloves of garlic
- 3 tablespoons olive oil
- 1 bell pepper
- 1 teaspoon paprika
- 1 teaspoon chili powder
- 2 teaspoons ground cumin
- 1/2 teaspoon salt
- 1/2 teaspoon pepper
- 1 can of whole peeled tomatoes
- handful cilantro or parsley
- feta for topping
- eggs as needed
Instructions
- Prepare the vegetables: Dice the onion and mince the garlic. Chop the bell pepper, removing the seeds.
- Cook the onions and peppers: Heat olive oil in a large pan over medium heat, add the onions and bell pepper, and cook until soft and translucent for about 10 to 12 minutes.
- Add spices and garlic: Stir in paprika, chili powder, ground cumin, and minced garlic, cooking for about 2 minutes.
- Add tomatoes: Add the whole peeled tomatoes to the pan, breaking them up with a wooden spoon, and adjust the consistency with tomato juice.
- Simmer the sauce: Bring the mixture to a boil, then reduce to a simmer for 15 to 20 minutes until thickened.
- Add eggs: Create wells in the sauce and crack eggs into each well, cover, and cook for 10 to 12 minutes until the whites are set and yolks are runny.
- Finish and serve: Sprinkle with cilantro or parsley and crumbled feta, then serve with crusty bread.
