Ingredients
- For Soft Flour Tortillas
- Flour
- Baking powder
- Salt
- Shortening (Crisco butter flavor shortening)
- Hot water
- For Homemade Chili
- Lean ground beef (1 lb)
- Salt
- Garlic powder
- Onion powder
- Pepper
- Ground cumin
- Beef bullion powder
- Chili powder
- Smoked paprika
- Tomato paste
- Chipotle peppers in Adobo sauce
- All-purpose flour
- Water
- Refried beans
- For Assembly
- Shredded American cheese
- Pickled jalapeno slices (optional)
- Salsa (optional)
Instructions
- Prepare the Soft Flour Tortillas
- Mix flour, baking powder, and salt in a bowl.
- Add shortening and mix until crumbly.
- Gradually add hot water and knead until a soft dough forms.
- Divide into dough balls, rest, and roll out into tortillas.
- Make the Homemade Chili
- Cook ground beef in a pan until browned.
- Add salt, garlic powder, onion powder, pepper, cumin, beef bullion powder, chili powder, smoked paprika, tomato paste, chipotle peppers, and flour.
- Stir in water and refried beans, simmer until thickened.
- Assemble the Chili Cheese Burritos
- Place a tortilla on a griddle, add cheese, chili, and additional cheese.
- Optionally add jalapeno slices or salsa.
- Roll up the burrito and toast if desired.
