Banana Pancakes

Ingredients
- 1 cup (120 grams) all-purpose flour
- 2 1/2 teaspoons baking powder
- 1/2 teaspoon salt
- 2 tablespoons granulated sugar
- 2 ripe bananas
- 1 egg
- 1 cup milk
- 1 teaspoon vanilla extract
- 3 tablespoons melted butter
Instructions
- Melt 3 tablespoons of butter and set aside.
- In a bowl, combine flour, baking powder, salt, and sugar. Whisk and set aside.
- Mash ripe bananas in a separate bowl, then add egg, milk, vanilla extract, and melted butter. Whisk to combine.
- Pour the wet ingredients into the dry ingredients and gently fold together. Do not overmix.
- Heat a pan over medium-low heat and add a pat of butter. Pour 1/3 cup of batter per pancake onto the pan.
- Cook for about 2 minutes until the bottom is golden brown and bubbles form on top.
- Flip the pancake and cook the second side until done.
- Repeat with the remaining batter.
- Serve warm and enjoy the fluffy, melt-in-your-mouth banana pancakes.
