Bavarian Pretzels

Ingredients
- 275 ml lukewarm water
- 5 g active dry yeast
- 1 tsp sugar
- 500 g bread flour
- 10 g salt
- 35 g butter
- 4 cups water
- 65 g baking soda
- 45 g honey
- Flaky salt or pretzel salt
Instructions
- In a bowl, add 275 ml of lukewarm water, 5 g of active dry yeast, and 1 tsp of sugar. Stir and let the yeast become active.
- In a mixing bowl, add 500 g of bread flour and 10 g of salt. Mix and pour in the yeast water mixture. Mix on medium speed for 2-3 minutes.
- Gradually add 35 g of butter and mix for another 5 minutes until you have a smooth soft dough.
- Remove the mixer and knead the dough by hand. Shape it into a ball and place it back into the bowl. Cover with a damp towel or cling film and let it rest for 20-25 minutes.
- Divide the dough into 6 equal pieces and roll them into logs. Let them rest for 20 minutes.
- Roll out the dough into pretzels and place them onto a lined baking sheet.
- Boil 4 cups of water and add 65 g of baking soda and 45 g of honey. Drop in one pretzel at a time and cook for 20 seconds on each side.
- Top the pretzels with flaky salt or pretzel salt and bake in a 425 degree Fahrenheit oven for 15-20 minutes.
- Remove from the oven and place on a cooling rack. Enjoy your Bavarian Pretzels!
