Ingredients
- Shiitake mushrooms
- Dried shrimps
- Garlic
- Chinese sausage
- Chicken thighs
- Dark soy sauce
- Light soy sauce
- Oyster sauce
- Sesame oil
- Rice wine
- Sugar
- Chicken stock powder
- White pepper
- Corn starch
- Cooking oil
- Rice
- Water
- Spring onions
- Fresh chillies
Instructions
- Rehydrate shiitake mushrooms by soaking in hot water.
- Finely chop garlic, slice Chinese sausage, and cut chicken thighs.
- Prepare sauce mixture with dark soy sauce, light soy sauce, oyster sauce, sesame oil, rice wine, sugar, chicken stock powder, and white pepper. Mix well.
- Add 3 tablespoons of sauce mixture to chicken, mix with corn starch, and marinate for 30 minutes.
- Retain mushroom water for later use, then slice mushrooms.
- In a non-stick pot, sauté garlic, dried shrimps, and sausages with 2 tablespoons of cooking oil.
- Add chicken and stir fry until partially cooked, then set aside.
- Add rice to the pot, pour in mushroom water, remaining sauce mixture, water, sliced mushrooms, chicken, and sausages.
- Cover the pot and set to high heat until water boils, then switch to low heat.
- Leave on low heat for 30-40 minutes.
- Garnish with spring onions and fresh chillies before serving.
