Brown Stew Chicken Wings

Ingredients
- Chicken wings
- Lemon juice
- Maggi seasoning
- Black pepper
- Onion powder
- Garlic powder
- Paprika
- Cayenne pepper
- Green seasoning
- Soy sauce
- Minced garlic
- Ginger
- Scallion
- Fresh thyme
- Onion
- Bell peppers
- Allspice berries (pimento seeds)
- Brown sugar
- Oil
- Tomato
- Ketchup
- Water
- Optional: Scotch bonnet
Instructions
- Wash chicken wings with lemon juice and cold water. Season with Maggi seasoning, black pepper, onion powder, garlic powder, paprika, cayenne pepper, green seasoning, soy sauce, minced garlic, ginger, scallion, fresh thyme, onion, bell peppers, and allspice berries. Mix well.
- Heat oil over medium-high heat, add brown sugar, and stir until melted and browned.
- Add chicken wings and cook for 2-4 minutes per side until browned. Remove wings from the pot.
- Add marinated veggies to the pot, stir for 2-3 minutes, then add tomato, ketchup, and water (enough to cover the chicken slightly).
- Taste and adjust seasoning, then simmer for about 20 minutes until chicken is cooked through.
- Optionally, add Scotch bonnet for heat.
- Serve with rice, Jamaican dumplings, and enjoy!
