Cajun Grilled Salmon and Dirty Rice

Ingredients
- 6-8 oz salmon fillets
- 2 tbsp lemon juice
- 2 tbsp Cajun seasoning
- 1 tbsp paprika
- 3 tbsp olive oil
- 1/2 onion
- 1/2 celery
- 1/2 red pepper
- 1/2 yellow pepper
- 1 cup rice
- 500g ground beef
- 1 tbsp oil
- Salt and pepper to taste
- Pinch of celery seed
Instructions
- In a bowl, mix together lemon juice, Cajun seasoning, paprika, and olive oil. Massage the mixture into the salmon fillets and let them marinate in the fridge for at least 3 hours.
- In a pot, sauté onion, celery, and peppers until they are soft. Add rice, salt, and pepper, and 2 cups of water. Bring to a boil, then reduce heat and let it simmer for 20-25 minutes.
- In a pan, cook ground beef with Cajun seasoning and celery seed until browned.
- Preheat grill to high heat, then reduce to medium. Grill salmon fillets for 6-7 minutes on each side.
- Serve salmon with dirty rice and enjoy!
