Heat tallow in a pan and cook chopped onions until lightly charred.
In another pan, melt ribeye fat and add in the shaved ribeye steak to caramelize.
Add in the cooked onions, chop thoroughly, and season with salt and pepper.
Warm milk and melt American cheese or provolone for the cheese whiz.
Lower heat, add sharp cheddar to thicken the cheese whiz, and season lightly.
Shape the meat into the size of the hoagie roll, top with cheese whiz, and steam for a few minutes.
Serve on hoagie rolls and enjoy!
