For the glaze: 100 g no sugar added ketchup, 30 g Worcestershire sauce, 15 g sriracha, 40 g brown sugar
Instructions:
Preheat a large pan on medium heat.
Combine breadcrumbs, milk, egg, soy sauce, and gelatin in a bowl. Whisk until combined and set aside to let the gelatin set.
Grate onion, carrot, and garlic. Sauté in avocado oil until softened. Add parsley, mushrooms, salt, and smoked paprika. Sauté for another 1-2 minutes.
In a large mixing bowl, combine the sautéed vegetables with ground beef, ground pork, salt, and pepper. Mix until just combined.
Shape the meat mixture into a loaf on an aluminum foil-lined sheet pan.
Broil the meatloaf for 8-10 minutes.
Preheat the oven to 400°F. Apply the first layer of glaze on the meatloaf and bake for another 15 minutes.
Apply a second layer of glaze and bake for an additional 5-10 minutes or until the internal temperature reaches 140-145°F.
Let the meatloaf rest for 15-20 minutes before slicing and serving.
